Noot's Thai Kitchen | Our Story

A family's love story, served on every plate
Noot's Thai Kitchen was born from a deep love — for Thai food, for family, and for the community of Victoria, Texas. Since 2011, we've been bringing bold, authentic flavors to the table, one made-to-order dish at a time.

How it started overseas
James Munsch grew up in Victoria but fell in love with Thai food and culture while working abroad — then met his spouse. Together they opened Noot's in 2011.
The name behind the sign
The restaurant was going to be named after James's spouse — but when their daughter Noot arrived, the choice was easy. That name above the door is a tribute, not a brand.
Nothing sits under a heat lamp
Every dish is cooked fresh to order — curries, stir-fries, noodle dishes, seafood. Life's too short for boring food.

Part of Victoria since 2011
For over a decade, Noot's has been the spot for first dates, family dinners, and office lunches across Victoria. James and his family look forward to many more years of sharing the food they love.
